Chicken Tzatziki Pita

Ingredients
Serves 23 chicken thighs (skin on)
1 lemon
3 garlic cloves
150ml greek yoghurt
1 red roasted pepper
1/4 small watermelon
1/2 cucumber
1 plum tomato
1 tbsp extra virgin olive oil
2 pita bread
1 tsp oregano
2 sprigs of mint
Optional: 1 tbsp crumbled feta
1. Get all your ingredients together and preheat your oven to 185c.
2. Marinate your chicken in 2 tbsp of yoghurt, oregano, lemon zest and juice, 1 tbsp of olive oil and season with salt and pepper.
3. Transfer the marinated chicken onto a lined baking tray and bake for 20-25 minutes.
4. Meanwhile, let's make the salad. Chop the red roasted pepper and mint, de-seed and dice the cucumber, watermelon and tomato followed by thinly slicing the red onion.
5. Time to build the dish. Put a bed of greek yoghurt on the plate, followed by the salad, then stack the chicken on top. Add a drizzle of olive oil if desired and enjoy.
