Jerk Chicken Skewers

High in protein and super simple to throw together after a long day.

Ingredients

2 chicken thighs
1 tsp of jerk seasoning
1 tsp of extra virgin olive oil
½ of ripe mango
1 red pepper
¼ white cabbage
1 small red onion
1 lime
Handful of coriander
2 tbsp of pomegranate seeds

1. Get your ingredients together and preheat your oven to 190C.

2. Cut the chicken thighs into bite-sized pieces and marinade them in olive oil and jerk spice.

3. Thread the chicken onto wooden skewers, placethemon a lined baking tray and cook in the oven for 15 minutes.

4. Meanwhile, let’s make the salad: Slice the cabbage and peppers thinly, cube the mango, dice the onion, chop the coriander, zest and juice the lime. Add them to the bowl together with the pomegranate seeds. Mix and season well.

5. Take the chicken skewer out of the oven.

6. Serve with the mango and pomegranate salad.
