Chipotle Prawn Tacos

Ingredients
Serves 28 king prawns
4 small tortilla wraps
2 tbsp smoked chipotle sauce
1 avocado
4 tbsp soured cream
1 lime
1 small brown onion
1/2 cucumber
1 cup of cherry tomatoes
1/2 cup of coriander
1 tbsp extra virgin olive oil
1. Let's get all the ingredients together. See above for everything you need.
2. First, make the salsa. Dice the cucumber, tomatoes, onion, crush and chop the garlic, roughly chop the coriander, zest and juice the lime.
3. Add all the ingredients into a mixing bowl, season with salt and pepper, a splash of olive oil and chilli oil if you fancy it.
4. Place a non-stick pan over medium heat, add a splash of oil and toast your tortillas on both sides. Set aside for later.
5. Add another splash of oil in the same pan and fry the king prawns on both sides until browned. Add the chipotle sauce and reduce down to a glazing coating.
6. Time to build your tacos. Spread a bit of sour cream on top of the toasted tortillas. Add the salsa, sliced avocado and top with your chipotle prawns. Enjoy.
