Tomato & Broccoli Pasta

A carb heavy lunch to fuel your body for an afternoon workout.

Ingredients

200g pasta of your choice
1 can chopped tomatoes
1 tbsp mascarpone
100g garden peas
80g tenderstem broccoli
1 onion
2 garlic cloves
1 tbsp olive oil
2 tbsp parsley

Optional: grated cheese

1. Boil a pan of water and add 1/2 tsp of salt for your pasta.

2. Slice the onion, chop the garlic, broccoli and parsley. 

3. Place a frying pan over high heat and add a splash of oil. Sauté the onion with garlic for three minutes, add chopped tomatoes and cook for 10 minutes longer.

4. Cook the pasta for 10 minutes then drain.

5. Add broccoli and cook until tender. Then, add the garden peas and mascarpone, and simmer for two minutes. 

6. Throw in the pasta and serve with chopped parsley and grated cheese.
