
Kimchi Fried Rice

Ingredients
Serves 2
250g packet of cooked rice
1 onion
2 tbsp of drained kimchi (save the juice)
1 pak choi
1 tsp of sesame oil
3 tbsp of sweet corn
3 tbsp of garden peas
1 tsp sesame seeds
Chives & coriander to garnish
Optional: 2 fried or poached eggs on top


2. Chop off the green leaves and thinly slice the stalk of the pak choi. Thinly slice the onion and chives before roughly chopping the baby corn.

3. Heat a deep frying pan or a wok with a splash of sesame oil over high heat and sauté the onion with pak choi for a minute, add kimchi, sweet corn, and garden peas.

4. Break down all the rice grains, and warm it up properly. Add kimchi juice and reduce it down.

5. Serve immediately and enjoy. Add a couple of fried eggs for an extra protein source.
