Salmon Pesto Pasta
Fancy trying something a little bit different? This potato-based pizza is packed with protein and the right amount of carbs to help fuel your workout.Ingredients
500g of new potatoes
1 onion
100g pizza sauce
2 handfuls of grated mozzarella
1 tsp of extra virgin olive oil
Salt and pepper
Protein of your choice
1. Here are the ingredients. Preheat your oven to 180C and boil the new potatoes until soft.
2. Strain and cool the new potatoes slightly before coating them with oil and seasoning with salt and pepper.
3. Use the palm of your hand to crush the potatoes. Transfer them to a baking tray and press down to form the base of your pizza. Bake in the oven for 15 minutes.
4. Slice the onion and leek, and sautè it in a pan.
5. Take the potato base out of the oven and spread the caramalised onion on top.
6. Add the pasta sauce, grated mozzerella and protein of your choice. Bake in the oven for a further three minutes or until cheese is melted.
7. Enjoy your potato-based protein pizza.
