Breakfast Stack

Ingredients
2 large eggs2 slices of toast
200g baby spinach
1 red onion
1 clove of garlic
100g streaky bacon
2 slices of halloumi
1. Get all your ingredients ready.
2. Peel and slice the onion, crush and roughly chop the garlic, dice the bacon and slice the halloumi.
3. Drizzle your bread with a splash of oil and toast it in the pan.
4. Using the same pan, add a bit more oil and sauté the onion, garlic and bacon for 5 minutes before adding the spinach. Cook for a couple of minutes and set aside.
5. Add another splash of oil to the pan and crack 2 eggs in the pan, Add the halloumi and fry off both sides for 5 minutes.
6. Build your Breakfast Stack and enjoy.
