Vegan fajitas take all the goodness from standard meat fajitas while being completely meat-free by using portobello mushrooms to deliver you some plant-powered protein and to this Mexican-inspired weeknight meal.

This dish is entirely plant-based, incredibly colourful and oh so tasty. Plus, you can whip it up in as little as 15 mins. Oh, and because it’s a one-pan dinner there’s also minimal washing. It’s a classic win-win.

Taking just 15 minutes to prep, these fajitas are an excellent meal prep option. Once cool, store the fajita filling in an airtight container and keep in the fridge for up to three days.

How to reheat vegan fajitas

When assembling your fajitas, I recommend heating through your filling and then adding it to a wrap alongside your cold ingredients. This way your wrap doesn’t go soggy.

Microwave:
  • Place the fajita mixture on a microwaveable plate or container.
  • Cook on medium-high heat for 3-4 mins.
  • Stir the mixture and cook for another 2 mins to ensure maximum heat.

Variations and add-ins

  • Boost the protein – Add in some black beans, kidney beans, chickpeas or tofu for some extra protein.
  • Give it some spice – Add some jalapeños or some chilli powder to give them some heat.
  • Make it smoky – Grill the veggies to give it that distinct smoky flavour.

15-minute ultimate mushroom fajitas

Vegan mushroom fajitas

Ingredients

  • 1 tbsp. Coconut oil
  • 2 bell pepper (sliced)
  • 1 white onion (sliced)
  • 4 Portobello mushrooms (sliced)
  • 1/4 tsp. paprika
  • 1 tsp. chilli powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cumin
  • 1 tbsp. soy sauce
  • Handful jalapeño peppers  (picked and sliced)
  • 6 small whole wheat tortillas
  • Spoonful guacamole
  • Spoonful tomato salsa

Instructions

Heat a large pan on a medium to high heat. Drop in the coconut oil, then once it has melted, add the sliced onions and bell peppers. Fry for 8-10 minutes until the vegetables begin to soften, then stir through the spices and fry for a further 2 minutes, stirring occasionally.

Add the Portobello mushrooms and soy sauce to the mixture and fry until browned – this should take around 4-6 minutes.

Once browned, warm the tortillas in the oven for 5-10 minutes or in the microwave on full power for 30 seconds. Fill the tortillas with your Portobello fajita mix, and top with jalapeño peppers, guacamole and salsa. Perfection.

What can I use instead of portobello mushroom?

Other mushrooms such as shitake or cremini are good alternatives. Or you can opt for tofu for a different texture.

How do I store leftovers?

Once the fajitas are room temp. Store the leftovers in an airtight container or cling film your plate and refrigerate for a week maximum.

Can I freeze the fajita filling?

Yes, you can. Pop any leftover filling into an airtight container or freezer bag and store in the freezer for up to two months.

Can I make these fajitas gluten free?

Swapping the tortillas for gluten free versions or romaine lettuce are great gluten free alternatives.
